These yummy vegetable puffs stuffed with fresh vegetables are my wife’s favorite afternoon snack. We had some fresh veggies in the pantry today so it’s time to get cooking some lovely puffs. Cooking at home is always about experimentation so feel free to change up on the veggies to whatever you have or to something you like. You just cannot go wrong with these yummy delights.
Cooking Time: 30 min
Serves : 3 people
- 10″ Pastry Sheet – stored at room temperature
- 1/2 tbsp Cumin seeds
- 2 chilies – cut into small pieces
- 1 medium size carrot – cut into small pieces
- 1 cup peas
- 1/2 cup beans – cut into small pieces
- 1 medium size potato cut into small pieces
- 1/4 bunch cilantro – finely chopped
- 1 tbsp ginger garlic paste
- 1/2 tbsp red chili power
- 1/4 tbsp turmeric power
- salt to taste
- 1/2 tbsp coriander powder
- 2 tbsp Oil
Cooking Instructions:
- Put all the vegetables in a bowl, add 2 tbsp of Water and put it in the microwave oven for about 3 min and set it aside.
- Heat oil in a heavy bottomed pan for 2 minutes under medium heat.
- Add cumin seeds, turmeric power, red chili powder, salt and heat it for 1 minute.
- Add ginger garlic paste and stir the pan for 1 minute
- Add all the vegetables, coriander powder and sauté the mix for 3 minutes
- Add cilantro and put the lid so that the mix will cook properly for 2 minutes.
- Take the mixture and put it aside in a bowl.
- Pre-heat the oven at 350F for 5 minutes.
- Take the pastry sheet and cut it into 6 pieces.
- Take the vegetable stuffing mixture, place it in the middle of the pastry sheet and fold it in half pressing the edges.
- Take a fork and press it along the edges of the pastry sheet with stuffing inside. This will help with the baking process and also gives the puff a nice pattern on the edges. Also, poke a hole in the center of the stuffing so that steam can escape during the baking process.
- Take all the stuffed pieces and place them evenly in a non-stick pan.
- Place the pan on the top shelf of the oven.
- Close the door and Heat the oven at 450F for 15 minutes.
- Wait for a couple of minutes and remove the pan. Leave it to cool off for 5 minutes.
- Place the puffs in a plate and garnish with Cilantro.
Enjoy these vegetable puffs with your family and friends. My wife did a quick taste test and told me that they were very delicious. Consider me a very lucky man ! Let me know how these come out for you.
