Main ingredients: plain flour, ghee and sugar.
Preparation: approx 45 minutes.
INGREDIENTS:
- 1 cup plain flour (maida).
- 1 tbsp ghee.
- oil for deep frying.
FOR SUGAR SYRUP:
- 1 cup sugar.
- Water- just enough to cover the sugar.
- 1 tsp fresh cardamom pwd.
FOR RICE FLOUR PASTE:
- 1 ½ tbsp rice flour/ biyyappindi.
- 1 ½ tbsp ghee.
PREPARATION:
- Place the plain flour along with 1 tbsp ghee in a mixing bowl.mix well. Add sufficient water and knead to make a stiff dough. Cover with damp cloth and keep aside.
- Mean while, for binding, mix together rice flour and ghee to make a white paste. keep aside until use.
- In a deep vessel, add the sugar with just enough water to cover. Boil the sugar syrup to one string consistency. Add cardamom pwd and keep aside.
METHOD:
- Make the dough into 2 equal parts. Roll out each ball into a big size roti.
- Apply the rice flour paste evenly on the roti.
- Take one side and start rolling the dough as shown in the figure.
- Cut in to small pieces and press a little, so that it sticks together.
- Again roll these pieces slight longer ones with rolling pin.
- Heat oil in a frying pan on medium flame, deep fry the rolled out kajas until golden brown color.
- Transfer them to the warm sugar syrup and let them soak for 3-5 minutes.
- Remove to a plate and allow it to dry until the sugar syrup hardens.
