Main ingredients: tomatoes and coconut milk.

Cook time: (approx) 30 minutes.

INGREDIENTS:

  1. Tomatoes: ¼ kg. (finely chopped).
  2. Onion- 1 medium. (finely chopped).
  3. Green chilies-2. (chopped).
  4. Salt- to taste.
  5. Turmeric powder- 1pinch.
  6. Red chilly powder- ½ tsp.
  7. Ginger garlic paste- ¼ tsp.
  8. Coriander leaves-4 sprigs. (chopped).
  9. Coconut- ½ piece (cut into fine pieces).

FOR SEASONING:

  1. Oil-2-3 tbsp.
  2. Red chili- 1 (tear).
  3. Anise – ¼ tsp.
  4. Bay leaves-1-2 (cut into pieces).
  5. Mustard seeds/  rai / aavaalu- ½ tsp.

6.   Split black gram(skin less)/ urad dal/ minappappu- ½ tsp.

PREPARATON:

Grind the coconut pieces with water to a fine paste. Filter the coconut milk from the coconut paste and keep a side.

COOKING INSTRUCTIONS:

Heat oil in a nonstick cooking pan on medium flame, add red chilies, anise, bay leaves and mustard seeds and split black gram. Let them splutter and add chopped onions, chopped green chilies and sauté. Add ginger garlic paste and sauté for another minute. Add chopped tomatoes, salt, turmeric powder and chopped coriander leaves.

Keep it cover for five minutes.

Remove the lid and stir fry for 5 minutes or till the tomato pieces turn to soften.

Now add 1 cup of coconut milk and red chili powder and mix well. Simmer for 5- 10 minutes or till the curry reaches to required gravy consistency.

Serve hot with any type of roti of your choice.
