INGREDIENTS:

  1. 1 cup sweet corn kernels.
  2. 2 tbsp corn flour.
  3. 1 medium onion (chopped).
  4. 6-8 green chilies.
  5. 2 tbsp mint leaves.
  6. 2 tbsp chopped coriander leaves.
  7. 1 tsp ginger garlic paste.
  8. ½ tsp garam masala pwd.
  9. Salt to taste.
  10. Oil- for deep fry.

  1. Grind the green chilies to a course paste.
  2. In a mix jar, grind the corn kernels to a course paste.

  1. In a mixing bowl, add the prepared  sweet corn paste along with corn flour, salt, chopped onion, prepared green chilly paste, mint leaves, coriander leaves, ginger garlic paste and garam masala pwd and combine well.  Make  lemon sized balls from this mixture and flatten them.

  2. Mean while, heat oil in a frying pan on over low flame, deep fry all tikkis one by one until crisp and golden brown.

Serve hot with tomato sauce, or green  chutney.

Main ingredients: paneer, plain flour and corn flour.

Preparation: 10 minutes.

Serves: 2.

INGREDIENTS:

  1. 200 grams paneer ( cut into thin slices).
  2. Oil- for deep frying.

TO PREPARE BATTER:

  1. 2 tbsp plain flour/ maida.
  2. 1 tbsp corn flour.
  3. Salt- to taste.
  4. 1 pinch food color.
  5. ¼ tsp red chilly pwd.
  6. ¼  tsp garam masala pwd.
  7. ¼ tsp soya sauce.
  8. 1 tsp vinegar.
  9. 1 big pinch black salt (optional).

  1. In a mixing bowl, mix all above mentioned ingredients add little water slowly to make a medium thick batter.

  2. Meanwhile heat oil in a frying pan on low flame, dip the paneer pieces into prepared batter and drop gently one by one into the hot oil.

  3.  Deep fry them until crisp and golden hue.
  4. At the end Sprinkle a little black salt on them.
  5.  Repeat for the remaining batches.
  6. Delicious, crispy paneer  ready to eat.

Serve them immediately with a dip of coriander chutney or tomato sauce or sweet and sour tamarind chutney.

Man ingredients: black eyed beans/ alasandalu, tomatoes and onion.

Preparation:  30 minutes.

Serves: 3-4.

INGREDIENTS:

  1. 1 cup black eyed beans/ alasandalu/ bobbarlu.
  2. 1 medium onion (finely chopped).
  3. 1 medium tomato (chopped).
  4. 2 tbsp fresh finely chopped cilantro.
  5. Salt- to taste.
  6.  ½ tsp garam masala pwd.
  7. ½ tsp red chilly pwd.
  8. ¼ tsp grated ginger (optional).
  9. 1 tsp lemon juice.

TO TEMPERING:

  1. 2 dry red chilies (cut into 2 pieces).
  2. 1 tsp oil.
  3. ½ tsp cumin seeds.
  4. 1 sprig curry leaves.img_3167

PREPARATION:

  1. Boil the soaked black eyed beans up to 3 whistles in pressure cooker with sufficient water.
  2. Drain to a bowl and keep a side.
  3. To tempering heat oil in a frying pan, add red chilies and cumin seeds.
  4. When they start to crackle add curry leaves, grated ginger, boiled black eyed beans and salt. Saute for a couple of minutes. Turn off flame and transfer to a mixing bowl.
  5. Add chopped onion, tomato, red chilly pwd, garam masala pwd, chopped coriander leaves and lemon juice to this mixture and mix well.

  3. 1 small cup gram flour/ besan flour/ senaga pindi.
  4. 1 tsp rice flour.
  5. 1 big pinch grated ginger (optional).
  6. Salt- to taste.
  7. 1 pinch soda bi carbonate.
  8. 1 sprig curry leaves.
  9. Oil for deep frying.

  • In a mixing bowl, place the gram flour along with rice flour, sliced onions, green chilies, grated ginger, salt, soda bi carbonate and curry leaves and mix everything well.
  • Now sprinkle little water to make a thick mixture. Keep aside.

INGREDIENTS:

  1. 2 cups sweet corn kernels.
  2. 1 medium onion (chopped).
  3. 5-6 green chilies.
  4. 3 tbsp plain flour/ maida.

  7. 1 tsp ginger garlic paste.
  8. 1 tsp garam masala pwd.
  9. 1-2 tbsp chopped coriander leaves.
  10. Oil for deep fry.

  1. In a mix jar grind the sweet corn kernels along with ginger,  garlic flakes, salt and green chilies to a course paste.
  2. Add chopped onion, garam masala pwd, rice flour, plain flour and chopped coriander leaves and combine. Keep aside.
  3. Heat oil in a frying pan.
  4. Take a small lemon sized ball of the mixture, flatten it with your wetted hands and slide it gently into the hot oil.
  5. Keep in medium heat and fry the vadas both sides till golden brown. Drain to a bowl and repeat the same procedure for the rest of the mixture.
  6. Enjoy hot with ketch up and  a cup of tea 🙂 🙂 .

Preparation:  30- 40 minutes (approx).

  1. ½ liter milk.
  2. China grass 20 grams packet/ agar – agar (available at any super market) (wash it with clean water).

  1. Bring the milk to a boil in a deep bottomed vessel. Add the washed China grass and sugar, turn off flame, cover with lid and let stand for at least 10 minutes until it soaks.

  2. After 10 minutes, again switch on the flame, let it simmer by stirring continuously until the china grass melts completely.
  3. Pour it in a wide vessel and let it cool. Now put this in the refrigerator for 1-2 hours or until it cools completely.

  4. Cut it into desired shape and serve chilled.

INGREDIENTS:

To manchurian balls:

  1. 1 cup grated cabbage.
  2. ¼ cup sweet corn kernels (fresh or frozen).
  3. 3 tbsp maida plain flour.
  4. 1 tbsp corn flour.
  5. Salt to taste.
  6. ½ tsp ginger garlic paste.
  7. ½ tsp red chilly pwd.
  8.  1 pinch red food color.
  9. 1 big pinch soda bi carbonate.
  10. Oil for deep fry.

To sauce:

  1. 1 medium onion (sliced thin).
  2. 1 small capsicum (sliced thin).
  3. ½ tsp finely chopped ginger.
  4. ½ tsp finely chopped garlic.
  5. Salt- to taste.
  6. 1 tsp soya sauce.
  7.  1 tsp tomato sauce.
  8. ½  brown sugar.
  9. 1 tsp red chilly sauce.
  10. ½ tsp garam masala pwd.
  11. 1 tbsp corn flour (mixed in 1 cup of water and 1 pinch of red food color).
  12. 1 tbsp vinegar.
  13. 1 tbsp chopped cilantro.
  14. 1 tbsp butter or oil.

  1. To prepare Manchurian balls, combine the all above mentioned (except oil) ingredients by adding little water to prepare thick batter. Make small balls with this mixture, keep aside.img_1466-copy
  2. Mean while, heat oil in a wok or frying pan on over low flame.
  3. Deep fry the prepared balls in the hot oil. Drain to a bowl, keep aside until use.

  4. In a wok or a frying pan, heat butter or oil, add chopped ginger, garlic, sliced onion and sliced capsicum and sauté for a few sec.
  5. Add salt, red chilly sauce, soya sauce, tomato sauce, vinegar, garam masala pwd, pepper pwd, corn flour liquid and saute for a few sec.
