Main ingredients: plain flour, ghee and sugar.

INGREDIENTS:

  1. 1 cup plain flour (maida).
  2. 1 tbsp ghee.
  3. oil for deep frying.

FOR SUGAR SYRUP:

  1. 1 cup sugar.
  2. Water- just enough to cover the sugar.
  3. 1 tsp fresh cardamom pwd.

FOR RICE FLOUR PASTE:

  1. 1 ½ tbsp rice flour/ biyyappindi.
  2. 1 ½ tbsp ghee.

PREPARATION:

  1. Place the plain flour along with 1 tbsp ghee in a mixing bowl.mix well. Add sufficient water and knead to make a stiff dough. Cover with damp cloth and keep aside.
  2. Mean while, for binding, mix together rice flour and ghee to make a white paste. keep aside until use.

  3. In a deep vessel, add the sugar with just enough water to cover. Boil the sugar syrup to one string consistency. Add cardamom pwd and keep aside.

METHOD:

  1. Make the dough into 2 equal parts. Roll out each ball into a big size roti.
  2. Apply the rice flour paste evenly on the roti.
  3. Take one side and start rolling the dough as shown in the figure.
  4. Cut in to small pieces and press a little, so that it sticks together.
  5. Again roll these pieces slight longer ones with rolling pin.
  6. Heat oil in a frying pan on medium flame, deep fry the rolled out kajas until golden brown color.
  7. Transfer them to the warm sugar syrup and let them soak for 3-5 minutes.
  8. Remove to a plate and allow it to dry until the sugar syrup hardens.
