INGREDIENTS FOR KOFTAS:

  1. 200 grams paneer/ cottage cheese( grated)
  2. 1 medium potato (boiled peeled and grated).
  3. 1 tbsp corn flour.
  4. ¼ Tsp fennel seeds (optional).
  5. Salt—to taste.
  6. 7-10 cashew nuts (broken).
  7. A few raisins/ kishmish.
  8. Oil for deep fry.

INGREDIENTS FOR GRAVY:

  1. 1 medium onion (chopped).
  2. 2 -3 green chilies.
  3. 2 medium tomatoes (chopped).
  4. ½ tsp fennel seeds. (optional)
  5. Salt- to taste.
  6. 1 pinch turmeric pwd.
  7. 1 tsp ginger garlic paste.
  8. ½ tsp kasuri methi (dried fenugreek leaves) (optional).
  9. 1 tsp garam masala pwd.
  10. 1 tsp red chilly pwd.
  11. 2 tsp coriander pwd.
  12. ½ tsp sugar.
  13. 10- 12 cashew nuts.
  14. 2 tbsp chopped cilantro.
  15. 1/2 cup fresh cream + 1 tsp cream for garnishing
  16. 2 tbsp oil.

Preparation of Kofta Balls

 

  1. Place the grated paneer along with grated potato, cashew nuts, raisins, salt and fennel seeds in a mixing bowl.
  2. Mix everything very well and make small balls out of it.
  3. Deep fry the balls on medium flame till golden brown. Keep aside.
  4. Grind the chopped onion, tomatoes and green chilies to a fine paste.  Keep aside.
  5. Grind the cashew nuts with little water to a fine paste. Keep aside.

  1. Heat oil in a frying pan, add fennel seeds and saute for a few seconds.
  2. Add ground onion tomato paste, ginger garlic paste, salt, turmeric pwd and red chilly pwd and sauté for 5-7 minutes or until the oil separates.
  3. Add coriander pwd, garam masala pwd sugar, kasuri methi and ground cashew nut paste and mix.
  4. Add 1 and half cup water and mix.
  5. Simmer for about 5 minutes or till the gravy slightly thickens.
  6. Add fresh cream, chopped cilantro and prepared kofta balls and mix.
  7. Simmer for another couple of minutes. garnish with 1 tbsp fresh cream.
