Main ingredients: semiya/ vermicelli, milk and dry fruits.

Preparation and cook time: 25 minutes (approx).

INGREDIENTS:

  1. 1 cup vermicelli/ semiya.
  2. ¾ cup sugar.
  3. 4 cups milk.
  4. A few saffron threads. (mix the saffron with 1 tbsp milk).
  5. ¼ cup almonds/badam.
  6. ¼ cup cashew nuts.
  7. 1/4  cup chirongi nuts/ saara pappu.
  8. ¼ cup raisins/ kishmish.
  9. 1 tbsp ghee.
  10. ½ tsp cardamom pwd.

PREPARATION:

  1. Boil the almonds, cashew nuts and chironji for 5 minutes, remove peel and cut the cashew nuts and amonds into long pieces. Keep aside.
  2.  Heat ghee in a frying pan, add the boiled dry fruits along with raisins and stir fry until light golden hue. Drain to a plate.
  3. In the same pan, add vermicelli and saute for a minute. Add milk and keep stirring till the milk is reduced and the vermicelli is soften.
  4. Add sugar and stir until it melts.
  5. Finally add saffron milk, cardamom pwd  and half of the roasted dry fruits and cook for another couple of minutes.
  6. Garnish with left over dry fruits and serve hot or chilled.
