Main ingredient: apricots/ Qubani.

Preparation: 30- 35 minutes (approx).

QUBANI KA MEETHA

INGREDIENTS:

  1. 200 grams dried apricots/ Qubani (soaked in with enough water for overnight or at least 5 hours).
  2.  100 grams sugar or as per your taste.
  3. 1 tsp cardamom pwd (optional).
  4. A few cashew nuts, almonds and raisins.

METHOD:

  1. Chop the swelled apricots roughly and put it into a nonstick cooking pan along with soaking liquid, sugar and cardamom pwd.
  2. Keep stirring, let it cook on low flame for about 25- 30 minutes or till it reaches mushy consistency. (add a little boiling water if needed).
  3. Once it’s done, let it cool and blend half of the cooked mixture to a fine paste.
  4. Pour the pureed apricots back into the cooking pan with the remaining cooked apricots.
  5. Adjust the sugar, add more if needed. Cook stirring continuously till it becomes thick pasty consistency.
  6. Garnish with roasted cashew nuts, almonds and raisins.
