INGREDIENTS:

  1. 1 Kg mutton (neatly washed).
  2. 2 medium onion (sliced).
  3. 6 green chilies (or as per your taste).
  4. 1  cup ghee.
  5. Salt to taste.
  6. 2 tsp turmeric pwd.
  7. 2 tbsp ginger garlic paste.
  8. ½ bunch coriander leaves
  9. hand full of rose petals/ gulabi rekhalu.
  10. A few roasted cashew nuts (for garnishing).
  11. a few roasted raisins (for garnishing).

SPICES:

  1. ½ tsp black pepper corns/ kali mirch/ miriyalu.
  2. 1 tbsp kabab chini (available at super markets).
  3. 2 cinnamon stick/ dal chini/ dalcina chakka.
  4. 2-3 cardamom / ealichi/ yalukalu.
  5. 2 tsp cumin seeds / jeera jeelakarra.
  6. 2 tsp shajeera.

LENTILS:

  1. 250 gms wheat grains or wheat rawa.
  2. ½ cup Black gram/ urad dal/ minapa gullu(skin less)
  3. ½ cup split bengal gram/ chana dal/ sanaga pappu.
  4. ½ cup barley (optional).

METHOD:

  1. Heat half of the ghee in a pressure cooker, add half of the spices and stir for a few sec. add sliced onion, green chilies, salt, turmeric pwd and ginger garlic paste and stir fry till you get a nice aroma.
  2. Now add coriander leaves and mutton bits and saute for few minutes.
  3. Pour  water to this mixture till the mutton sinks completely.
  4. Cover with lid and pressure cook up to 1 whistle, reduce flame and let it cook for at least 45 minutes.
  5. Mean while, heat 1 tbsp ghee in another pressure cooker, add remaining half of the spices and roast until you get a nice aroma. Add wheat and other lentils and stir fry for a couple of minutes on low flame.
  6. Once cool,  add rose petals and blend to a course powder and put it in the same pressure cooker.
  7. Pour 4 cups of water and mix. Pressure cook up to 1 whistle, Reduce flame and simmer for 30 minutes.
  8. Once cool, mash the mixture slightly with wooden masher.
  9. Add this mixture to the cooked mutton mixture and mash well.
  10. Add leftover ghee and cook stirring continuously for 30 minutes or till the haleem reaches to desired consistency.
  11. Garnish with coriander leaves, roasted cashew nuts and raisins.
