Main ingredients: gram flour and cilantro.

INGREDIENTS:

  1. 1 cup Gram flour/ besan flour/ sanaga pindi.
  2. 1 cup neatly washed and chopped cilantro/ coriander leaves/ dhaniya/ kothimeera/ kothamalli.
  3. Salt- to taste.
  4. 1 tsp ginger garlic paste.  (optional).
  5. 1 big pinch Soda-bi-carbonate/eating soda.
  6. 1 medium onion (very finely chopped).
  7. 3-4 green chilies (very finely chopped).
  8. Water (little amount).
  9. And oil for deep fry.

  1. In a wide bowl place the all above ingredients (except oil) and mix everything well.

  2. The consistency of the batter should be medium (not too thick or too thin). Keep aside until use.
  3. Meanwhile heat oil in a frying pan on medium- over low flame. (it’s important to keep flame low till it’s over).
  4. Only then, you get the puffy nature.
  5. Once hot, take a lump of pakoda batter and slide the batter gently into the hot oil.

  6. There is no need to make them in shapes. These are actually shape less. Do not over crowd the pan.

  7.  Deep fry till they turn to golden hue.
  8. Drain them on an absorbent paper.
  9. Make pakodas in batches with the rest of the batter.

Serve immediately with a cup of tea at cold evenings. It also goes well as a side dish with sambar rice or any type of dal rice at lunch time.

TIPS: ginger garlic paste is optional. If you want to more spice, you can add ginger garlic paste in this batter.
