main ingredients: chicken and spices.
preparation :10 minutes.
To marinate:30 minutes.
Cook time: approx 30 minutes.
INGREDIENTS:
- ½ kg chicken (neatly washed).
- 1 medium onion (chopped).
- 3-5 green chilies(slit and cut into 2 pieces).
- Salt- to taste.
- 1 pinch turmeric pwd.
- 1 ½ tsp red chilly pwd.
- 1 tbsp coriander pwd.
- ¼ tsp black pepper pwd.
- 1 tsp chicken masala pwd or (powdered 6 cloves + ½ “cinnamon stick + 1 cardamom).
- 1 tsp ginger garlic paste.
- 1 tsp vinegar or lemon juice.
- 2 tbsp coriander leaves.
- 2 or more than 2 sprigs curry leaves.
- 2-3 tbsp oil.
PREPARATION:
- Marinate the chicken pieces along with all above ingredients (except green chilly bits, coriander leaves, curry leaves and oil) and mix.
- Keep it in the fridge for at least 30 minutes.
METHOD:
- In a heavy bottomed cooking pan, cook covered the marinated chicken by adding little water on medium flame for 15- 20 minutes or till the water almost evaporates. Keep aside.
- Heat oil in a frying pan on over low flame.
- Add cooked chicken and stir fry for 10- 12 minutes or till the pieces turn to golden brown color.
- Finally add green chilly bits, coriander leaves and curry leaves and cook for another minute.
Serve hot as a side dish with rasam rice or sambar rice or biriyani or any type of roti.
