Main ingredients: rice and jaggery.

INGREDIENTS:

  1. Rice and  Jaggery/ gud/ bellam.
  2. Oil needed for fry.
  3. 1 tsp powdered cardamom pwd/ elaichi/ yalukalu.
  4. 2-3 tbsp Ghee.

And ariselu chekkalu (to extract excess oil).

PREPARATION:

  1. Soak the raw rice for 1 ½ days. Wash and drain through a colander. Grind it to a very smooth powder.
  2. Grate the jaggery and keep aside.

METHOD:

  1. In a heavy bottomed cooking vessel, place the grated jaggery along with ½ cup of water and stir continuously until the jaggery melts.
  2. Strain with strainer to remove impurities.
  3.  Pour the syrup in the same pan and cook, stirring continuously until the syrup form a thick consistency.

  4. The consistency is very important. To check the syrup consistency, take some water in a plate. Put little syrup into the water, check if it is settled at the bottom without melting.
  5. in this stage, turn off flame, add sesame seeds, cardamom pwd and sprinkle prepared rice flour quickly little by little and stir, so that it does not form lumps.

  6. Keep adding the flour until the syrup holds. Once you get the soft ball consistency, Stop  adding the flour and pour 2-3 tbsp of ghee and mix.
  7. Take a little in a small bowl and cover the rest.IMG_6710
  8. Take a small lemon sized ball and pat it with your hand on a greased plastic sheet to a 3” diameter round disc.
  9. Mean while heat oil in a frying pan to deep fry the ariselu.

  10. Once the oil is hot, reduce flame to medium high and carefully slide the prepared ariselu (Disc) into the hot oil.

  11. Cook for a few seconds till it turns golden brown. Gently flip to the other side and cook until it turn to golden brown.IMG_6708
  12. Drain on the wooden presser (ariselu chekkalu) and press over the ariselu nicely to remove excess of oil from it.
  13. put on an absorbent paper.
  14. Repeat the same process with all dough.
