Main ingredients: cauliflower and spices.

Preparation and cook time 30 minutes (approx).

SPICY CAULIFLOWER CURRY

INGREDIENTS:

  1. 1 medium cauliflower (separate florets, remove leaves and cut the stems into small pieces).
  2. 1 medium onion (chopped).
  3. 1 medium tomato (chopped).
  4. 2 green chilies (chopped).
  5. 1 ½ tbsp oil.
  6. 1 tsp cumin seeds/ Jeera/ Jeelakarra.
  7. Salt to taste.
  8. ¾ tsp red chilly pwd.
  9. 1 pinch turmeric pwd.
  10. 1 tbsp coriander pwd.
  11. ½ tsp garam masala pwd.
  12. ½ Ginger garlic paste.
  13. 2 tbsp curd.
  14. 1 tbsp cashew nuts paste.
  15. 2 tbsp chopped cilantro.

METHOD:

  1. Heat oil in a cooking vessel, add chopped onion, chopped cauliflower stem, green chilies and saute for a minute. Add ginger garlic paste and saute until aromatic.

  2. Add cauliflower florets, salt and turmeric pwd and cook with lid for 5-7 minutes or until the florets soften, stirring occasionally.

  3. Add chopped tomato and let it cook until the tomato get soften.

  4. Add garam masala, red chilly pwd, coriander pwd, curd, and cashew nuts paste and mix.

  5. Add ¾ cup of water and cover with lid, simmer for 10- 13 minutes or until the gravy slightly thicken.

  6. Garnish with chopped cilantro.
