Main ingredients: split red gram/ kandi pappu and vegitables.

INGREDIENTS:

  1. 1 small cup split red gram dal/ kandi pappu (neatly washed).
  2. 2 medium onions (Sliced).
  3. 3-4 green chilies (slit length wise).
  4. 2 medium potatoes ( neatly wash and cut into 1” rounds).
  5. 4-6 fresh beans (cut in to 2” pieces).
  6. 2 -3 medium tomatoes (cut into 4 pieces).
  7. 2 medium carrots (peel cut into thin rounds).
  8. Salt- to taste.
  9. 1 big pinch turmeric pwd.
  10. 1 tsp red chilly pwd.
  11. 1 tbsp coriander pwd.
  12. 1 small lemon sized tamarind.
  13. 2 tbsp fresh coriander leaves.

TO TEMPERING/ TADAKA/ TAALIMPU:

  1. 1 tbsp oil.
  2. 1 dry red chilly (cut into two pieces).
  3. 2 flakes garlic (slightly crushed).
  4. 1 tsp cumin seeds/ jeera/ jeelakarra.
  5. 1 tsp split black gram/ urad dal/minappappu.(skin less).
  6. 1 tsp mustard seeds/ rai/ aavaalu.
  7. 1/4 tsp asafoetida/ hing/ inguva.
  8. 1 sprig curry leaves.

PREPARATION:

  1. Pressure cook the split red gram along with 2 cups of water up to 3 whistles. Once cool mash the cooked dal into a fine paste. Keep aside.
  2. Mean while, in a deep bottomed cooking vessel, place the above mentioned ingredients along with 3 cups water.

  3. Bring it to a boil and simmer for 5 minutes.
  4. Once vegetables are half cooked, add the prepared red gram paste and combine.

  5. Cover with lid and simmer for another 10 minutes. Keep aside.

  6. To prepare tempering: Heat oil in a small frying pan, add red chilly, crushed garlic flakes and saute for a few sec. Add cumin seeds, mustard seeds, split black gram and let them splutter. Now add asafoetida and curry leaves.

  7. Pour this temper over the prepared sambar and mix well.

Serve hot with idli, dosa, pongal, vada or steamed rice.
