Main ingredients: steamed rice and lemon.

INGREDIENTS:

  1. 2 cups steamed rice.
  2. ½ tsp turmeric pwd.
  3. 2 big lemons or to taste.
  4. 3-4 green chilies (chopped).
  5. Salt- to taste.
  6. 2 tbsp fresh chopped cilantro.

TO TEMPERING/ TADAKA/ TALIMPU:

  1. 1 ½ tbsp oil.
  2. 2-3 dry red chilies (cut into to two pieces).
  3. 1 tbsp ground nuts.
  4. 1 tsp split Bengal gram/ chana dal/ patchi senega pappu.
  5. 1 tsp mustard seeds/ rai/ aavaalu.
  6. 1 tsp split black gram/ urad dal/ minappappu (skin less).
  7. ¼ tsp asafetida/ hing/ inguva.
  8. 1 sprig curry leaves.
  9. ¼ tsp asafetida/ hing/ inguva.
  10. ¼ tsp grated ginger (optional).

PREPARATION:

  1. Squeeze the lemons in a small bowl, add salt and chopped green chilies. Soak the chilly bits for at least 10 minutes.
  2. Mean while, in a wide bowl, place the steamed rice, half tbsp oil, salt, turmeric pwd and half of the curry leaves. Mix very well. Keep aside

  3. To tempering, heat oil in a frying pan, on low flame. Add red chilly bits, ground nuts, split Bengal gram, split black gram, mustard seeds.

  4. When the seeds start to change add asafetida, grated ginger and remaining half of the curry leaves and turn off flame.
  5. Immediately, our this tempering over the rice mixture, add chopped cilantro and mix every thing well.
