INGREDIENTS:

  1. 1 cup lentils (green gram/moong , chick peas or your choice). (Wash and soak the lentils over night.  Remove the water from lentils and keep them aside for a day. When the germination starts, we see the sprouts coming out, which increase the protein level between the lentils).
  2. 1 medium onion (very finely chopped).
  3. 1 medium tomato (finely chopped).
  4. 2 tbsp finely chopped cilantro.
  5. Salt- to taste.
  6. 1 big pinch black pepper pwd.
  7. ½ tsp red chilly pwd.
  8. 1 tsp chaat masala pwd or garam masala pwd.
  9. 1 fresh lemon.
  10. 1 tsp butter.

  1. Heat butter in a nonstick pan, add lentil sprouts and stir fry quickly for a couple of minutes.
  2. Drain to a bowl, add chopped onion, tomato, cilantro, salt, black pepper pwd, chat masala and red chilly pwd and mix well. (You can also add chopped cucumber and chopped carrot).
  3. Squeeze a fresh lemon and mix.
  4. Healthy lentil sprout salad is ready to serve.
