Main ingredients: cauliflower and tomato

Preparation and cook time: 30 minutes.

Serves: 2-3.

INGREDIENTS:

  1. 2 cups cauliflower florets (neatly washed).
  2. 2 medium tomatoes (chopped).
  3. 1 medium onion (chopped).
  4. 1 medium capsicum or 2 green chilies (chopped).
  5. Salt- to taste.
  6. 1 pinch turmeric powder.
  7. ½ tsp ginger garlic paste.
  8. ½ tsp red chilly pwd.
  9. 2 big pinches garam masala pwd.
  10. 2 tbsp chopped cilantro.

TO TEMPERING:

  1. 1 ½ tbsp oil.
  2. 1 tsp cumin seeds/ jeera/ jeelakarra.
  3. 1 tsp mustard seeds/ rai/ aavaalu.
  4. 1 tsp split black gram / urad dal/ minappappu (skin less).
  5. 1 sprig curry leaves.

PREPARATION:

  • Par bail the cauliflower florets in sufficient water for just 5 minutes. Drain and keep aside.

METHOD:

  1. Heat oil in a cooking vessel, add cumin seeds, mustard seeds and split black gram and let them splutter.

  2. Add chopped onion and saute for a minute.

  3. Add par boiled cauliflower florets, salt and turmeric pwd and stir fry gently for 7- 10 minutes on low flame.

  4. Add chopped tomato, curry leaves, capsicum, ginger garlic paste, red chilly pwd, garam masala pwd and mix.

  5. saute for a minute or until fragrant.
  6. Now cook covered, by stirring occasionally for 5-7 minutes or till the tomato and capsicum bits tender.

  7. Garnish with chopped cilantro and serve hot with steamed rice or roti.
