INGREDIENTS:

  1. 4 cups rice flour.
  2. 3 tbsp ghee.
  3. 2 tbsp split Bengal gram/ chana dal/ pachi sanaga pappu (soak for 2-3 hours).
  4. 1″ ginger(chopped).
  5. 4-5 green chilies.
  6. Salt – to taste.
  7. Oil for deep frying.

PREPARATION:

  1. Grind the chopped ginger and green chilies to a course paste. Keep aside.

  1. In a wide vessel, place the rice flour, salt, ginger green chilly paste, soaked Bengal gram and ghee and mix well.
  2. Add enough water gradually to make a fine dough. (the dough should not be too soft or too hard. It should be like chapati dough).

  3. Make the dough small lemon sized balls.
  4. Mean while heat oil in a heavy bottomed frying pan.

  5. Take a greased thick plastic cover. Grease your hands and take one dough ball on the plastic sheet and flatten it evenly to form a small circle (disk). Make 6-7 disks for 1 batch.

  6. Once the oil heated up, gently remove the flattened disks from the plastic sheet and drop gently into the hot oil.

  7. Deep fry the chakkalu (disks) on medium flame till they turn to golden brown hue.
  8. Drain on an absorbent paper.
  9. Repeat the same process till the rest of the dough is done.

Once cool, store in an air tight container.
