Main ingredients: plain flour and Pesara pappu.

Preparation and cook time 45 minutes.

INGREDIENTS:

  1. 1 cup plain flour.
  2. 2 tbsp oil or ghee.
  3. Salt- to taste.

FOR FILLING:

  1. 1 tbsp oil.
  2. ½ cup split yellow gram moong dal/ pesara pappu. (soak for 2 hours then grind into a course paste).
  3. 1 tsp cumin seeds.
  4. 2 pinch asafetida.
  5. 1 pinch turmeric pwd.
  6. ½ tsp garam masala pwd.
  7. 1/4 tsp red chilly pwd.
  8. ¼ tsp dry mango pwd/amchur pwd.

AND

  1. Oil for deep frying.

PREPARATION:

  1. In a wide bowl, mix together plain flour, salt and oil and knead into a fine dough using enough water.IMG_1026
  2. Mean while, heat oil in a nonstick cooking pan, add cumin seeds as they begin to crackle, add turmeric pwd, asafetida, amchur pwd, garam masala pwd, red chilly pwd and salt and mix.
  3. Add ground split yellow gram paste/ moong dal paste and cook, stir occasionally for 5-7minutes or until dry. Let it cool and keep aside.
  4. Then knead the dough again.
  5. Make the dough into big lemon size balls.
  6. Roll out each ball into thick small puri.

  7. Place 1 tsp split yellow gram filling, fold it like a pouch and seal it tightly.

  8. Now roll it out slightly with rolling pin.

  9. Repeat it for making more kachoris.
  10. Heat oil in a frying pan on medium fame.IMG_1042
  11. Slide 4-5 prepared kachoris and deep fry till they puff up.

  12. Reduce flame and fry for another 5 minutes or till they turn to golden hue.

  13. Drain on absorbent paper.
  14. deep fry remaining kachoris and serve hot.
