Cabbage Coconut Fry

INGREDIENTS:

  1. 300 grams cabbage (shredded).
  2. 1 onion (chopped).
  3. 3-4 green chilies.
  4. 1 medium capsicum (cubed) (optional).
  5. ½“piece ginger (peel and chop).
  6. 1 small piece coconut (chopped).
  7. Salt- to taste.
  8. 1 pinch turmeric pwd.
  9. 1 tbsp oil.
  10. 1 tsp cumin seeds.
  11. 1 tsp mustard seeds.
  12. 1 tsp split black gram (skin less).
  13. 1 sprig curry leaves.

PREPARATION:

  1. Boil the shredded cabbage with sufficient water for 5- 7 minutes. Remove from water and keep aside.
  2. Grind the coconut along with chopped ginger and green chilies to course. Keep aside.

METHOD:

  1. Heat oil in cooking vessel on low flame. Add cumin seeds, mustard seeds and split black gram.
  2. Let them splutter, add curry leaves, chopped onion and capsicum and saute for a minute.

  3. Add boiled cabbage, salt and turmeric pwd and stir fry for 7-10 minutes or until the water evaporates.

  4. Add ground coconut mixture and cook for a while.

Serve hot with steamed rice or roti.
