Main ingredients: beans (French beans) and carrots.

Preparation  and cook time 25 minutes.

INGREDIENTS:

  1. 25o grams beans (wash string and cut in to small pieces).
  2. 3 medium carrots (wash, peel the skin and cut into small pieces).
  3. 1 medium onion (chopped).
  4. 2 green chilies (chopped).
  5. 1 tsp grated coconut.
  6. Salt- to taste.
  7. 1 pinch turmeric pwd.
  8. ¼ tsp red chilly pwd.
  9. 1 sprig curry leaves.

TO TEMPERING:

  1. 2- 3 tsp oil.
  2. ½ tsp cumin seeds/ jeera/ jeelakarra.
  3. ½ tbsp mustard seeds/ rai/ aavaalu.
  4. ½  tsp split black gram/ urad dal/ mina ppappu.    (skin less).

  • Boil the beans and carrot pieces along with enough water for 5-7 minutes. Drain and keep aside.

METHOD:

  1. Heat oil in a frying pan on over low flame.
  2. Add cumin seeds split black gram, mustard seeds.

  3. Let them splutter. Add curry leaves, chopped onion and green chilies and saute for a minute.
  4. Add boiled beans carrot mixture, salt and Turmeric pwd and mix.

  5. Cook, stirring occasionally on low flame for 7- 10 minutes.

  6. Add grated coconut and red chilly pwd and mix and turn off flame.

Serve hot as a side dish with dal rice or sambar rice.
