Main ingredients: tomatoes, drumstick and capsicum.

Cook time: 25 minutes.

Capsicum Tomato Drumstick Curry

INGREDIENTS:

  1. 6-7 medium tomatoes (finely chopped).
  2. 1 drumstick (cut into 2- 3” pieces).
  3. 1 Big capsicum (cut into square).
  4. 2 medium onions (chopped).
  5. 2 tbsp fresh finely chopped coriander leaves.
  6. Salt- to taste.
  7. 1 pinch turmeric pwd.
  8. ¼ tsp red chilly pwd.
  9. ¼ tsp garam masala pwd (optional).

TO TEMPERING:

  1. 1 tbsp oil.
  2. 1 tsp mustard seeds/ rai/ aavaalu.
  3. 1 tsp split black gram/ urad dal/ minappappu. (skin less).
  4. 1 tsp cumin seeds/ jeera/ jeelakarra.
  5. 1 sprig curry leaves.

METHOD:

  1. Heat oil in a cooking pan, add mustard seeds, cumin seeds and split black gram and let them splutter.
  2. Add curry leaves, chopped onion, drumstick bits, salt and turmeric pwd and saute for 2-3 minutes.
  3. Add capsicum cubes and cook for a couple of minutes.
  4. Add chopped tomato and cook until soften.
  5. Add red chilly pwd and garam masala pwd and mix.
  6. Now add water cover with lid and cook for 3 minutes or till the curry slightly thicken.
  7. Garnish with coriander leaves.IMG_3546

Serve hot with rice or roti.
