Royyalu Jeedi pappu Koora/ Prawns Cashew nuts Recipe

INGREDIENTS:

  1. 1 cup prawns (Peeled and deveined).
  2. 1 small cup cashew nuts (soaked for 1 hour).
  3. 1 big onion (finely chopped).
  4. 2-3 green chilies (chopped).
  5. 2 medium tomatoes (finely chopped).
  6. 1 1/2 tbsp oil.
  7. Salt- to taste.
  8. 1 big pinch turmeric pwd.
  9. ¾ tsp red chilly pwd.
  10. 1 tbsp coriander pwd.
  11. ½ tsp ginger garlic paste.
  12. ½ tsp garam masala pwd or (powdered 1 cardamom+ 6 cloves+ ½ “ cinnamon stick).
  13. 1 small cup thick coconut milk.
  14. 1 tbsp cashew nut paste.
  15. 1 small bunch coriander leaves (finely chopped).

METHOD:

  1. Heat oil in a cooking pan on medium flame. Once hot, add chopped onion and green chilies and sauté for a minute.
  2. Add ginger garlic paste and sauté until fragrant. Add prawns, salt and turmeric pwd and cook until the water evaporates.
  3. Add chopped tomato and cook till tomatoes soften.
  4. Add red chilly pwd, coriander pwd, garam masala pwd, cashew nuts paste and drained cashew nuts and mix.
  5. Now add coconut milk and 1½ cup water and well combine.
  6. Cover with lid and cook until the prawns are cooked and gravy thickened.
  7. Garnish with fresh coriander leaves.
  8. Serve hot with steamed rice, fried rice or any type of roti.
