INGREDIENTS:

  1. 4- 6 Medium long brinjals.
  2. 1 cup gram flour/ besan flour/ kadali mavu/ sanaga pindi.
  3. Salt- to taste.
  4. 1 pinch cooking soda.
  5. Oil- for deep fry.

  1. Cut each brinjal into 2-3 pieces. Then cut each piece into thin long slices.
  2. To prepare batter, in a bowl, place gram flour, salt and cooking soda and mix.
  3. Add enough water to make a batter of thick coating consistency. (The batter should not be too thick or too thin).

METHOD:

  1. Heat oil in a deep bottomed frying pan on medium flame.
  2. Dip brinjal slices into the batter and coat it on all sides.IMG_1565
  3. Slide each coated brinjal slice into the hot oil and deep fry till the brinjal bajjis turn to light golden hue.

  4. Drain them in a paper napkin. (Paper napkin absorbs excess oil).
