INGREDIENTS:

  1. 2 cups plain flour/ maida.
  2. ½ cup semolina/ upma rawa.
  3. Oil: sufficient for deep frying.
  4. 2 ½ tbsp ghee.
  5. 2 cups grated jiggery.
  6. Enough water to immerse jiggery.
  7. 1 tsp cardamom pwd.

  1. In a wide bowl, place the plain flour and ghee and mix well.
  2. Add enough water to make a tight dough let it rest for half an hour.

  3. Knead again. Make small balls. Then make shell shape by using your thumb to press each ball gently onto the gavvalu chakka and roll into a shell shape. (as shown in the picture).

  4. Spread gavvalu on a paper until use. (Without getting mixed up).

  5. Mean while, heat oil in a wide frying pan.

  6. Add gavvalu and deep fry on over medium flame till golden color. Keep aside.

  7. To prepare jaggery syrup, Place  jiggery and water in thick bottomed cooking vessel.
  8. Stir till the jiggery melts.

  9. Cook, stirring continuously, over low heat, till a thick syrup is formed.
  10. To test if the syrup is ready, drop 2-3 drops of jaggery syrup into a bowl of cold water and the jaggery forms a firm ball .

  11. Remove jaggery syrup from flame  and add cardamom pwd and prepared gavvalu and combine very well to coat the gavvalu.

Cool completely and store in an airtight container.
