Main ingredients: plain flour, semolina, curd and baking soda.

  1. 1 ½ cups Plain flour (maida).
  2. ½ cup semolina/ sooji/ upma ravva.
  3. ½ tbsp baking powder.
  4. ½ cup curd.
  5. 1 tsp sugar.
  6. Salt- to taste.

PREPARATION:

  1. In a bowl, place all above ingredients (except oil) and mix well.

  2. Add very little water and knead into soft dough. The dough should not be too soft or too hard.

  3. Cover with damp cloth and keep aside for 2 hours.

  1. After 2 hours knead again the dough and make small lemon size balls.
  2. Roll into 4-5 inch round shaped rotis with rolling pin or puri presser.
  3. The roti should not be too thick or too thin.
  4. Mean while heat oil in a frying pan.  Once the oil gets heated up, reduce flame to medium flame and slide the bhatura into the hot oil.
  5. Using the back of the ladle, press the bhatura edges till it puff up.
  6. Flip over and fry the other side till the bathura turn to light golden hue.
  7. Delicious, spongy bhature are ready to eat.

Serve hot with any type of chole curry or any type of dal recipe (pesara pappu tomato recipe).
