Main ingredients: Bengal gram, mint leaves.

Prepare time: 15- 20 minutes.   Cook time: 15 minutes.

INGREDIENTS:

  1. 1 cup split Bengal gram/chana dal/ sanaga pappu.
  2. 1 medium onion (chopped).
  3. 4-5 green chilies.
  4. 1” ginger.
  5. 4 flakes garlic.
  6. Spices (1” cinnamon stick+ 2-3 cloves).
  7. Salt- to taste.
  8. ½ bunch mint leaves.
  9. 2-3 tbsp s chopped coriander leaves. (optional).
  10. Oil – for deep frying.

  1. Wash and soak the split Bengal gram for 2 hours.
  2. Drain the water completely and keep 2 tbsp soaked Bengal gram aside.
  3. Grind Bengal gram along with green chilies, chopped ginger, cloves garlic, salt and spices(with out adding water) to a course paste
  4. Put the ground paste in to a wide bowl. Add the leftover Bengal gram, chopped onion, plucked mint leaves and chopped coriander leaves and mix everything well.

METHOD:

  1. Heat the oil in a frying pan, on medium flame.

  2. Take  lemon sized vada mixture on your hand, shape it to a small ball, flatten it with your hands to medium thickness and slide the vada in hot oil.

  3. You can make vadas in batches of 6-7. (Don’t stir till the vadas starts to change color).

  4. Once they starts to change color, flip and deep fry on over low heat till they turn to golden color.

  5. Repeat  the same procedure till you finish the ground mix.
  6. Serve hot with your favorite chutney or tomato sauce.

NOTE:

  1. You can also replace ginger and garlic with ginger garlic paste.
  2. You can also replace spices with ½ tsp garam masala pwd.
  3. You can even add soaked split green gram.
