Main ingredients: red sorrel leaves  (pulla gongoora) and mutton.

INGREDIENTS:

  1. 1 ½  tbsp oil.
  2. ½ kg mutton. (Neatly washed).
  3. 3-4 large bunches Red sorrel leaves (plucked and neatly washed).
  4. Salt- to taste.
  5. 1 pinch turmeric pwd.
  6. 2- 2 ½ tsp red chilly pwd.
  7. 1 tsp ginger garlic paste.
  8. 1 medium onion (chopped).
  9. 4 green chilies.

FOR TEMPERING:

  1. 1 tbsp oil.
  2. 2 red chilies (tear).
  3. 2 flakes garlic (slightly crushed).
  4. 2 sprigs curry leaves.
  5. 1 tsp cumin seeds/ jeera/ jeelakarra.
  6. 1 tsp split black gram/ minappappu.
  7. 1 tsp mustard seeds/ rai/ aavaalu.

METHOD:

  1. Heat 1 tbsp oil in a pressure cooker. Add half of the chopped onion and ginger garlic paste and saute till fragrant.
  2. Now add mutton pieces, enough salt, and half of the red chilly pwd and pressure cook up to 3-4 whistles.

  3. Meanwhile, in a wide cooking vessel boil the red sorrel leaves in 2 cups of water, salt, turmeric pwd, remaining half of the red chilly pwd,  remaining half of the chopped onion, green chilies for 10- 15 minutes till soft.

  4. Mash the red sorrel leaves mixture with ladle till soft paste.
  5. Add this hemp paste to the cooked mutton and Cook for 5 minutes till the moisture almost dry up.

  6. For tempering, heat oil in a pan. Add red chilies, crushed garlic flakes, cumin seeds, mustard seeds, split black gram.
  7. When they begin to change color, add curry leaves and pour this tempering over the red sorrel leaves and mutton mixture and mix.

  8. Serve hot with steamed rice or roti.
