Main ingredients: sorakaya /bottle gourd/louki, cashew nuts and tomatoes.

Preparation and cook time: (approx) 45 minutes.

INGREDIENTS TO PREPARE KOFTAS:

  1. 1 Cup grated bottle gourd.
  2. 1 small onion (finely chopped).
  3. 2 green chilies (very finely chopped).
  4. 1 tbsp very finely chopped cilantro.
  5. Salt- to taste.
  6. 1 tsp garam masala pwd.
  7. 1 tsp red chilly pwd.
  8. 2-3 tbsp gram flour.

INGREDIENTS TO PREPARE GRAVY:

  1. 2 tbsp oil.
  2. 3 spices (1 cardamom/ yaluka + 2 cloves/ lavangalu + 1” cinnamon stick/ dalchina chakka)
  3. 2 medium onions (roughly chopped).
  4. 2 green chilies (roughly chopped).
  5. 2 medium tomatoes (roughly chopped).
  6. Salt- to taste.
  7. 1 pinch turmeric pwd.
  8. 1 tsp red chilly pwd.
  9. 1 tbsp coriander pwd.
  10. 1 tsp garam masala pwd.
  11. 2 tbsp curd.
  12. 10- 15 cashew nuts.
  13. 2 tbsp finely chopped cilantro (coriander leaves).

PREPARATION:

  1. grind the roughly chopped onion, green chilies and tomatoes to a fine paste.
  2. grind the cashew nuts with a little water to a smooth paste.

TO PREPARE KOFTAS:

  1. Grated cabbage contains water substance. So take little amount of it into the palm and squeeze the water out. Finally save the water for the gravy.
  2. In a bowl, place the grated bottle gourd along with chopped onion, green chilies, cilantro, salt, red chilly pwd, gram flour and ginger garlic paste, and mix well to make a fine dough.
  3. Make small lemon sized balls out of the mixture.

  4. Mean while heat oil in a frying pan, on medium flame.
  5. When the oil heated up, reduce flame and drop the kofta balls gently and stir fry them till they turn to golden brown color.

  6. Drain and keep aside until use.

TO PREPARE GRAVY:

  1. Heat oil in another nonstick pan on over low flame. Add 3 spices and fry for few seconds.

  2. Add ginger garlic paste and saute for 10 seconds.

  3. Now add ground onion and tomato paste, curd, salt and turmeric pwd and sauté for 5-7 minutes until the oil separates.

  4. Add ground cashew nuts paste, red chilly pwd, coriander pwd, garam masala pwd and mix well.

  5. Then add squeezed bottle gourd juice (add a little water if necessary) and simmer for 5-7 minutes till the gravy slightly thickens.IMG_9148

  7. Finally add chopped cilantro and fried kofta balls.

  8. Simmer for another 2 minutes so that the koftas absorb the flavour of the gravy. Serve hot with naan, rotis, jeera rice or steamed rice.
