INGREDIENTS:

  1. 1 cup grated bottle gourd/ sorakaya/ lowki.
  2. ½ liter milk.
  3. ½ cup sugar.
  4. 1 pinch food color (green).
  5. 1 ½ tbsp ghee.
  6. 5- 10 cashew nuts.
  7. 10 raisins.
  8. ½ tsp cardamom pwd.

  1. In a thick bottomed pan, bring milk to a boil, lower heat and cook, stirring continuously till it is reduced to three- fourths the original quantity. Keep a side until use.
  2. Meanwhile, heat ghee in a nonstick frying pan; add cashew nuts and raisins and saute till lightly browned. Drain and keep aside.
  3. Add grated bottle gourd to the same pan and saute in the remaining ghee for 10-12 minutes till it turns to soft.

  4. Add sugar and food color (green) and cook till it dissolves.

  5. Now add thick milk and cook, stirring continuously for about 10 minutes till the mixture slightly thickens.

  6. Add cardamom powder, roasted cashew nuts and raisins and mix well.

  7. Serve hot or cold.
