Main ingredients: paneer (cottage cheese) and cashew nuts.

Preparation and Cook time: 30 minutes (approx).

INGREDIENTS:

  1. 250 grams Paneer Cottage cheese. (Cut into cubes)
  2. 20 cashew nuts.
  3. 2 medium onions (roughly chopped).
  4. 2 medium tomatoes (roughly chopped).
  5. Salt- to taste.
  6. ½  tsp Ginger garlic paste
  7. 1 tsp red chilly pwd,
  8. 1 tbsp coriander pwd.
  9. 1 tsp garam masala pwd or channa masala pwd.
  10. ½ cup yogurt.
  11. 1 cup water.
  12. 1 tsp ghee.
  13. 1 ½  tbsp oil.
  14. 1/2 tsp fennel seeds (optional).
  15. SPICES: (4 cloves+ 1” cinnamon stick+ 2 bay leaves+ 1 cardamom).
  16. 1 tbsp cream.

Onion Tomato Cashew nuts Paste Preparation

  1. Heat 1 tsp ghee or oil in a frying pan on low flame. Add cashew nuts and stir till they turn to golden hue.
  2. Add chopped onion and saute for a few seconds,
  3. finally add tomato bits. Stir fry for a few minutes till they turn to tender.
  4. Let it cool and blend to a fine paste. Keep aside,

METHOD:

  1. Heat 1 1/2 tbsp oil in a cooking pan on over low flame.
  2. Add spices and stir for a few seconds.

  3. Add ginger garlic paste and saute for a minute till fragrant.
  4. Add onion and tomato paste, salt, red chilly pwd, coriander pwd and garam masala pwd and saute for 5 minutes.

  5. Add yogurt and mix. Add water and cook for 5-7 minutes or till the mixture slightly thicken.

  6. Add paneer cubes and mix gently and cook for 2 minutes.

  7. Garnish with cream and serve hot with butter naan, pulka or chapatti.
