Main ingredients: paalak (spinach) and paneer (cottage cheese).

Cook time: 30 minutes.

INGREDIENTS:

  1. 2 big bunches spinach/ paalak/ paala koora. (Roughly chopped).
  2. ¼ bunch fenugreek leaves (plucked).
  3. 200 grams paneer/ cottage cheese. (Cut into 1” cubes or into triangular shape).
  4. 2 medium size onions (cut into cubes).
  5. 2 medium size tomatoes (cut into cubes).
  6. 1 cup yogurt.
  7. Salt- to taste.
  8. 3-4 cloves  and 1” cinnamon stick.
  9. 1 tsp finely chopped ginger.
  10. 5-6 cloves garlic (finely chopped).
  11. 1 tsp garam masala pwd.
  12. 1 tsp red chilly pwd.
  13. 1 tsp cumin seeds/ jeera/ jeela karra.
  14. 2 tbsp oil.

METHOD:

  1. Heat 1 tbsp oil in a cooking vessel on medium flame.

  2. Add cubed onion and saute until soften.

  3. Add chopped spinach. Add fenugreek leaves and saute for a few minutes till they soften and turn a little dry.

  4. Add tomato cubes and stir fry for 2 more minutes or till the tomato pieces turn to soften.
  5. Blend the cooled mixture along with ½ cup water, to a course paste. Keep a side.
  6. Heat butter or oil in another cooking vessel on low flame.
  7. Add cloves, cinnamon stick and cumin seeds and stir for a few seconds.

  8. Add finely chopped garlic and ginger.

  9. When they turn to golden, add the ground paalak mixture.
  10. Add salt. Garam masala pwd, red chilly pwd.

  11. Finally add curd and mix. Simmer, uncovered for 3-5 minutes.
  12. Add paneer pieces and simmer for 3 minutes till paneer pieces turns to soft.

  13. Transfer to a serving bowl.

  14. Serve hot with naan, pulka, chapatti or any type of roti.
