Sometimes all it calls for is simplicity and this recipe is all about simple fresh ingredients with none of the fancy fare.  This is one of my wife’s favorite dish to have on a blissful autumn afternoon.  This is very easy, extremely tasty and super healthy for your tummy ! so, try this and let me know if you agree with me.

Easy Breezy Vegetable Pulao

 

Here are the ingredients:

Vegetable Pulao – Ingredients

  1. Basmati Rice ( soaked for 30 min in cold water )
  2. Potatoes – 1 big size – sliced into bit size pieces.
  3. Peas – Fresh ones – about a small bowl.
  4. Green beans – farm fresh – cut into small pieces.
  5. Carrots – 1 big one – sliced into small pieces.
  6. Chillies – 2 – sliced into small pieces
  7. Ginger – 1 inch – sliced into thin stripes.
  8. Bay Leaves – 4 small size ones.
  9. Cloves – 4
  10. Elachi – 2
  11. Star Anise – 2
  12. Cinnamon sticks – 2 small size ones.
  13. Cooking Oil – 2 tbl spoons.
  14. Ghee ( clarified butter ) – 1 tbl spoon ( this is primarily for aroma than taste )
  15. Salt to taste

Cooking Instructions:

  1. In a non-stick or steel pan, pour 2 tbl spoons of cooking oil and put it in medium heat. Once the oil heats up, add 2 Bay Leaves, 2 Cloves, 2 Elachi, 2 Star Anise , 2 cinnamon sticks and saute them for a couple of minutes. This is to bring the aroma and spice oils from them. Add salt to taste.Vegetable Pulao
  2. Now add all the fresh vegetables and saute them for about 5 minutesVegetable Pulao
  3.  After that cover the pan to cook for about 10 min. Make sure the potatoes are cooked.Vegetable Pulao
  4. Once the vegetables are cooked, take them out aside into a bowl and cover the bowl.Vegetable Pulao
  5. Now put the rice in the pan, add required water – for a glass of rice add about 1 and three quarters of water.  Add 1 tbl spoon of ghee, 2 bay leaves, 2 cloves and 2 elachi. Add a small pinch of salt too. ( please note that we added salt to the vegetable mix too ). Cook the rice for about 15 min on medium heat. keep checking the rice, make sure not to over cook it. Vegetable Pulao
  6. Once the rice is cooked ( make sure you can clearly separate each grain individually )Vegetable Pulao
  7. Now add the cooked vegetables onto the cooked rice.Vegetable Pulao
  8. You can now carefully ( make sure you don’t break the rice grains ) mix the vegetables into the cooked rice.Vegetable Pulao
  9. Put a lid and set this aside for about 10 min.  After that you can serve hot.  Check out those colors and aroma !
