INGREDIENTS:

  1. 1 cup Black gram (skin less) (soaked for 3 hours).
  2. 2 green chilies.
  3. 1“ginger (chopped).
  4. Salt – to taste.
  5. 4 cups diluted butter milk or enough needed for soaking.
  6. Oil- needed for deep fry.
  7. 1 cup yogurt (beaten curd).
  8. 1-2 tbsp chopped cilantro.
  9. 1 small cup sev or boondi.

FOR TEMPERING:

  1. 1 tsp oil.
  2. 1 red chilly (slit).
  3. 1 tsp mustard seeds/ rai/ aavaalu.
  4. 1 tsp split black gram/ urad dal/ minappappu.
  5. 1 tsp cumin seeds/ jeera/ jeelakarra.
  6. 1 pinch asafetida/ hing/ inguva
  7. 1 sprig curry leaves.

  1. Grind the soaked black gram (skin less) to a fine paste by adding very little amount of water.
  2. Grind the chopped ginger along with green chilies to a course paste.
  3. In a deep bottomed vessel, pour the diluted butter milk along with salt, ginger chili paste and mix. Keep aside.
  4. Heat oil in a deep bottomed frying pan on medium flame.
  5. Wet your palms with water; take lemon sized urad batter in your hand. Flatten it with another hand. Make hole in the middle of the urad batter and slide gently into the hot oil.
  6. Deep fry 6- 7 vadas per batch.
  7. Deep fry both the sides of the vadas till they turn to light golden brown color.
  8. Remove the vadas from oil and the pour them into the butter milk mixture.
  9. Soak the vadas in the butter milk for about 30 minutes.
  10. Meanwhile  prepare the tempering  by heating the oil in a pan, add the red chili bits, mustard seeds, cumin seeds and split black gram and fry until they crackle. Add asafetida and curry leaves. Turn off flame and pour the tempering over the beaten curd and mix. Keep aside until use.
  11. Remove the vadas from the butter milk and place them on a serving plate.
  12. Pour the yogurt and tempering mixture over the vadas.
  13. Garnish with sev or boondi and chopped cilantro.
