Main ingredients: Semolina (rawa), sugar and coconut.

RAVVA LADDU (Diwali Special)

INGREDIENTS:
1  1 cup semolina (rawa).
2  1 cup sugar.
3  1 cup grated coconut.

4  1 tsp ghee.

5  2-3 strings saffron (soaked in 1 tbsp of warm water).
6  10 cashew nuts (broken in half).
7  10- 15 raisins (kismis).
8  10 almonds.
9  1/2  tsp cardamom pwd.
METHOD:
1 Heat ghee in a non stick cooking pan on over low flame.
2 Add dry fruits (cashew nuts, almonds and raisins and stir fry until they change  color and the raisins puff up and remove.
3 Add semolina in the same pan and stir fry for 3-5 minutes or until fragrant and remove into a plate.

4 Now add grated coconut in the same pan and stir fry for 5 minutes.

5 Add fried semolina, sugar and cardamom pwd and well combine.

6 Then add soaked saffron water and stir continuously  to prevent the mixture from burning and sticking to the bottom of the pan for 3-5 minutes.

7 Turn off the flame and add half of the roasted dried fruits and cardamom pwd and mix well.

8  Allow it to cool at room temperature until warm enough to handle and divide the mixture into 20 equal parts and shape into round laddus (balls).
9 Decorate each laddu with remaining roasted dried fruits.

10 Let them cool and preserve in an air tight container.
