INGREDIENTS FOR POORNAM BATTER:

  1. 1 cup black gram (skin less) (Soak for 3 hours).
  2. 2 cups for raw rice. (Soak for 3 hours).
  3. A pinch of salt.
  4. And oil for deep fry.

INGREDIENTS FOR KESARI:

  1. 1 small cup semolina (upma rawa).
  2. 1 small cup sugar.
  3. 2 small cups water.
  4. 1 tsp cardamom powder.
  5. 1 tbsp ghee.

  1. Grind the soaked black gram and soaked rice to a smooth paste adding a pinch of salt and enough water to get a consistency thicker than dosas batter.
  2. Transfer the batter to a bowl Keep a side until use.
  3. To prepare kesari, in a vessel, bring the water to a boil. Add semolina and mix continuously to prevent lumps.
  4. Cook for 2 minutes or until most of the water is absorbed.
  5. Add sugar and mix. Stir continuously for a minute.
  6. Now add cardamom powder and ghee and cook till the semolina is properly cooked and it forms a thick mixture.
  7. When the kesari is warm enough to handle, roll into a big lemon sized balls. Keep aside.
  8. To prepare kesari poornalu, heat oil in a deep bottomed frying pan on medium flame.
  9. Now dip each kesari ball in the rice and black gram batter and let it coat evenly and slide gently into the hot oil and deep fry till golden hue.
  10. Transfer to a serving bowl and serve hot.
