INGREDIENTS:

  1. 2 medium beetroots (chopped).
  2. 1 medium onion (chopped).
  3. 2 green chilies (chopped).
  4. 1 sprig curry leaves.
  5. 2 tbsp s chopped cilantro.
  6. 2 tbsp s ground nuts.
  7. 1 tsp oil (for ground nut powder preparation).
  8. 1 tsp cumin seeds.
  9. 2 dry red chilies.
  10. 2 flakes garlic.

FOR TEMPERING:

  1. 1 tbsp oil.
  2. 1 tsp cumin seeds (optional)/ jeera/ jeelakara.
  3. 1 tsp mustard seeds/ rai/ aavaalu.
  4. 1 tsp split black gram (skin less)/ urad dal/ minappappu.

  1. Heat 1 tsp oil in a frying pan and add ground nuts along with red chilies and cumin seeds and stir fry until light brown color. Let them cool.
  2. Grind the roasted ground nuts mixture with flakes garlic to a course powder. Keep aside until use.

METHOD:

  1. Heat oil in a nonstick cooking pan on low flame.  Add mustard seeds, cumin seeds split black gram and let them splutter.
  2. Add chopped onion, green chilies, salt and turmeric pwd and saute for 10 seconds.
  3.  Add chopped beetroot and mix. Cover with lid and saute occasionally for 7- 10 minutes.

  4. Remove lid and add chopped cilantro and ground nut powder and mix.

  5. Saute for 2 minutes and transfer to a serving bowl.
  6. healthy beetroot fry is ready to eat. serve with roti or rice.
