INGREDIENTS:

  1. 300 gm s lady’s fingers (cut the edges and cut into rounds).
  2. 2 small bunches fenugreek leaves/ methi/ menthi koora (neatly washed and chopped).
  3. 1 medium onion (chopped).
  4. 2 green chilies (chopped).
  5. Salt- to taste.
  6. 1 pinch turmeric pwd.
  7. ½ tsp red chilly pwd.
  8. 2 tbsp s chopped coriander leaves.

FOR TEMPERING:

  1. 1 ½ tbsp oil.
  2. 1 tsp cumin seeds/ jeera/ jeela karra.
  3. 1 tsp split black gram (skin less)/ urad dal/ minappappu.
  4. 1 tsp mustard seeds/ rai/ aavaalu.
  5. 1 slightly crushed garlic.
  6. 1 sprig curry leaves.

METHOD:

  1. Heat oil in a non- stick frying pan on over low flame.
  2. Add crushed garlic, cumin seeds, mustard seeds and split black gram and let them splutter.
  3. Add curry leaves, chopped onion, green chilies and saute for a minute.
  4. When they soften, add lady’s finger bits, salt, turmeric pwd and mix.

  5. Stir fry for 10-15 minutes until the pieces turn to soften and light brown color.

  6. Now add chopped fenugreek leaves, red chilly pwd and chopped coriander leaves and stir fry for another 5 minutes.

  7. Serve hot as side dish with dal or sambar.
