Main ingredients: red chilies, seeds, and tamarind.

NALLA KARAM/ KARAPPODI

INGREDIENTS:

  1. 5 Dry red chilies (Slit).
  2. Small lemon size tamarind.
  3. Salt- to taste.
  4. 1 tbsp split black gram.
  5. 1 tbsp Split Bengal gram.
  6. 2 tbsp s coriander seeds.
  7. 3 Flakes garlic (crushed).
  8. 1 tsp cumin seeds.
  9. 3 sprigs curry leaves(optional).
  10. 3 tsp s ghee.

PREPARATION:

  1. Heat 1 tsp oil in a frying pan on low flame. Add dry red chilies and stir fry until golden brown color. Drain to a bowl.
  2. Next add split Bengal gram and stir fry until golden brown color and drain.
  3. Add 1 tsp oil and split black gram and stir fry until light golden brown color and drain in the same bowl.
  4. Now add coriander seeds and stir fry for 4-5 minutes or until fragrant and drain.
  5. Add 1 tsp oil and curry leaves and stir fry until wilt and turn to crisp and drain into the same bowl.
  6. Let them cool and grind all the roasted and cooled ingredients along with salt and cumin seeds to a course powder.
  7. Now add crushed flakes garlic and tamarind bits and grind again to a course powder.
  8. Store in an air tight container.
