The other day we went out as a family for a movie and we really enjoyed the samosas during intermission break.  So today, I wanted to give these yummy delights a try at home and they came out really good. It is a north-indian variant from the usual onion-based samosas that we find here locally in the south. Very easy to make and serves as a great snack for your family.  Please try my recipe and leave a comment on how it comes out.

Main ingredients: plain flour, potato and green peas.

Preparation: 30 minutes.                   Cook time: 10 minutes.

DOUGH INGREDIENTS:

  1. 1 cup plain flour.
  2. ¼ tsp ajwain.
  3. 2 pinch salt.
  4. 1 tbsp ghee.
  5. 4-5 tbsp s water.

  1. 2 medium potatoes (boiled, peeled and mashed).
  2. 1 small cup fresh green peas (boiled).
  3. 1 tbsp oil.
  4. Salt- to taste.
  5. 1 pinch turmeric pwd. (optional).
  6. Coarsely ground (2 green chilies + Mint leaves 10- 15+ ¼ “piece ginger)
  7. 1 tsp cumin seeds.
  8. ¼ tsp asafoetida.
  9. ½ tsp pavbaji masala pwd or garam masala pwd.
  10. 1 tsp coriander (slightly crushed).
  11. 1 sprig curry leaves.
  12. 2 tbsp s coriander leaves.
  13. oil for deep frying.

PREPARATION:

  1. To make dough, sift flour and rub in ghee with your finger tips. Add salt, ajwain and water and knead into stiff dough. Cover with a damp cloth and set aside for 15- 30 minutes.
  2. To make potato curry, heat oil in a nonstick pan on over low flame. Add cumin seeds and asafoetida and sauté for a few seconds.
  3. Add ginger green chilly paste and crushed coriander and sauté for another few seconds. Add curry leaves, 1 cup of mashed potato, boiled green peas, salt and turmeric pwd and mix.
  4. Stir fry for 5 minutes. After that add garam masala pwd or pawbaji masala pwd and chopped coriander leaves and mix well. Keep aside until use.

  5. To prepare samosa, devide the dough into 4 equal balls. Roll out the balls into small puris. Now cut each puri into 2 halves.
  6. Take one half and fold like a cone as shown in the picture.

  7. Fill the cone with the curry which is prepared before and apply little water on the edges to seal it.

  8. Repeat the same process to make more samosas.

METHOD:

  1. Heat sufficient oil in frying pan and deep fry samosas on medium flame till golden brown.

  2. Drain on absorbent paper.

Serve hot with tomato sauce with fried green chilly or green chutney.
