Main ingredients: palakoora/ spinach and red gram.

INGREDIENTS:

  1. 1 cup red gram dal/ tur dal/ kandi pappu (100 gm s). (neatly washed).
  2. 2 big bunches spinach/paalak/paala koora.
  3. 1 medium onion (chopped).
  4. 3-4 green chilies. (split).
  5. 2 medium tomatoes (chopped). (Optional).
  6. Salt- to taste.
  7. 1 turmeric pwd.
  8. 1 tsp red chilly pwd.
  9. Big lemon size tamarind.
  10. 1 sprig curry leaves.
  11. 2 tbsp s chopped coriander leaves.
  12. 2 cups water.

FOR TEMPERING:

  1. 1 ½ tbsp s Oil.
  2. 3 dry red chilies.
  3. 3 flakes garlic (slightly crushed).
  4. 1 tsp cumin seeds/ jeera/ jeelakarra.
  5. 1 tsp mustard seeds/ rai/ aavaalu.
  6. 1 tsp split black gram (skin less)/urad dal/ minappappu.
  7. ¼ tsp asafetida/hing/ inguva..
  8. 1 sprig curry leaves.

METHOD:

  1.  In a cooking vessel, place washed red gram dal along with water and bring it to a boil.
  2. Simmer until the dal half cooked.

  3. Now add chopped spinach, chopped onion, green chilies, chopped tomato, salt, turmeric pwd, red chilly pwd, chopped coriander leaves and 1 sprig curry leaves and mix. Add little water if necessary.

  4. Simmer (without lid) for 10- 15 minutes or till the dal is almost cooked.

  5. Turn off flame, add salt to the dal mixture and mash with ladle into a course. Keep aside.

  6. Prepare the tempering by heating the oil and adding the red chilly, crushed flakes garlic, mustard seeds, cumin seeds, split black gram and stir till mustard seeds crackle. Add asafoetida, curry leaves and turn off flame.
  7. Pour the tempering over the palak dal/palakoora pappu.

Serve hot with rice or roti.
