INGREDIENTS:

  1. ½ kg. Gherkins (Tindoora)/dondakayalu (washed/ cut into rounds).
  2. 1 medium onion (chopped).(optional)
  3. 2-3 green chilies (chopped).(optional)
  4. Salt to taste.
  5. ½ tsp red chilly pwd.
  6. 2 tbsps chopped coriander leaves.
  7. Oil- sufficient for deep fry.

FOR TEMPERING:

  1. 1 tsp oil.
  2. 1 dry red chilly.
  3. 3 flaks garlic (slightly crushed).
  4. 1 tsp cumin seeds/ jeera/ jeelakarraa.
  5. 1 tsp mustard seeds/ rai/ aavaalu.
  6. 1 tsp split black gram (skin less)/ urad al/minappappu.
  7. 1 sprig curry leaves/ carivepaaku.

  1. For deep frying, heat oil in a frying pan on over medium flame.
  2. Slide the gherkin bits and deep fry for 10- 15 minutes or until the gherkin bits turn to light golden hue. Drain and set aside.

  1. Heat oil in another pan. Add red chili, crushed garlic, cumin seeds, mustard seeds, split black gram.
  2. When they begin to change color, add chopped onion and green chilies and stir fry until golden brown color.
  3. Then add fried gherkins, salt turmeric pwd, red chilly pwd, curry leaves and chopped coriander leaves and mix everything well for a minute.
  4. Turn of flame and transfer into serving bowl.

Hotel style gherkins fry is ready to eat. Serve hot as a side dish with any type of dals or sambar.
