  1. 3 cups rice.(sona Masuri) (neatly washed, soaked and drained).
  2. 3 tbsp s ghee+ 3 tbsp s oil.
  3. Salt- to taste.
  4. 2 medium onions (thinly sliced).
  5. 7 green chilies (slit).
  6. 4-6 medium tomatoes (chopped).
  7. 1 ½ tbsp s ginger garlic paste.
  8. 10 sprigs mint leaves (plucked).
  9. ½ bunch coriander leaves (finely chopped).
  10. 2-3 tsp s lemon juice.
  11. 1/2 piece coconut (ground to a smooth paste by adding little water).

SPICES:

  1. 2 bay leaves/biriyani aaku.
  2. 2 Star anise/ anaasa pvvu.
  3. 3 wailong/ marati mogga.
  4. 3 cardamoms/ yalukalu.
  5. 2” cinnamon stick/ daalchina chekka.
  6. 6-8 cloves/lavangalu.

INGREDIENTS OF PAR BOILED CHICKEN CURRY:

  1. ½ kg chicken pieces (neatly washed).
  2. Salt- to taste.
  3. 1 pinch turmeric pwd.
  4. 1 tsp red chilly pwd.
  5. 1 tbsp coriander pwd.
  6. 1 tsp chicken masala pwd or(powdered 6-8 cloves+ 1 cardamom+ 1” cinnamon stick) .
  7. 1 tbsp poppy seeds paste.
  8. 1 tbsp coconut paste.
  9. 1 small chopped onion.
  10. 1 tsp chopped green chilies.
  11. 2 tbsp s coriander leaves.

TO PREPARE par boiled chicken curry:

  1. Heat oil in a cooking vessel on over medium flame. Add chopped onion, green chilies and saute for a few seconds. Add ginger garlic paste and saute until fragrant.
  2. Now add chicken pieces, salt, turmeric pwd and mix.
  3. Cook for 5-7 minutes or until water gets evaporated.
  4. Add red chili pwd, poppy seeds paste, coconut paste, coriander pwd, coriander leaves and a little water.
  5. Stir well and cook (without lid) until the gravy thickens. Stirring occasionally. (Don’t over cook until they become soft).

ANDHRA CHICKEN PULAV METHOD:

  1. Heat ghee+ oil in a cooking vessel. Add bay leaves, star anise, cloves, cardamoms, cinnamon stick, and wailongs. Stir for a few seconds.
  2. Add chopped onion, green chilies, ginger garlic paste, salt and turmeric pwd and saute until fragrant.
  3. Add mint leaves and chopped tomatoes and saute until tender.

  4. Add water and coconut paste (or thick coconut milk) and mix. Cover with lid. Bring it to a boil.

  5. Add soaked rice and mix. Cover and cook until the water has been almost absorbed.

  6. Now add par boiled chicken curry and chopped coriander leaves and mix. Adjust salt.

  7. Cook covered on low flame for about 10- 15 minutes or till the rice is completely cooked.
  8. Finally add lemon juice and stir gently. Serve hot.
