INGREDIENTS:

  1. 2 cups atukulu/ poha/ thick rice flakes.
  2. 1 medium onion (finely chopped).
  3. 2 green chilies (chopped).
  4. Salt- to taste.
  5. ½ tsp Ginger garlic paste.
  6. 1 sprig curry leaves.
  7. 2 tbsp s fresh coriander leaves (chopped).
  8. 1 tsp lemon juice.

FOR TEMPERING:

  1. 1 tbsp oil.
  2. 1 dry red chilly.(optional).
  3. ½ tsp cumin seeds/ jeera/ jeelakarra.
  4. ½ tsp mustard seeds/ rai/ aavaalu.
  5. ½ tsp split Bengal gram (skin less).
  6. ½ tsp split black gram (skin less)/urad dal/ minappappu.

PREPARATION:

  • Wash the poha and soak with sufficient water for 2- 3 minutes to moisten the rice flakes. Drain, squeeze slightly and set aside.

METHOD:

  1. Heat oil in a nonstick pan on over low flame. Add dry chilly, cumin seeds, mustard seeds, split black gram.
  2. When they begin to change color add chopped onion, green chilies, ginger garlic paste and saute until fragrant.

  3. Now add the poha and salt and stir gently for 3- 5 minutes.

  4. Add curry leaves, chopped coriander and lemon juice and mix well and serve hot.
