This is one of the famous dish in North India. we ate this at Punjabi’s dhaba (hotel) in Rajasthan. my kids always ask me to make this recipe. You can also make this the way I did and let me know how these came out 🙂 :).

Main ingredients: wheat flour and potatoes.

Preparation: 15 minutes.  Cook time: 3o minutes.

INGREDIENTS TO PREPARE PARATA:

  1. ¼ kg. wheat flour (atta).
  2. Salt- to taste.
  3. Water – sufficient to knead dough.
  4. 2 tsp ghee for shallow frying.

INGREDIENTS TO PREPARE AALU(POTATO) CURRY:

  1. ¼ Kg. potatoes (boiled, peeled and mashed).
  2. 1/2 tsp cumin seeds.
  3. Salt- to taste.
  4. 1 pinch turmeric pwd.
  5. ¼ tsp red chilly pwd.
  6. ½ tsp ginger garlic paste.
  7. 1 tbsp chopped coriander leaves. (optional).
  8. 1 tbsp oil.

  1. To prepare aalu (potato) curry, heat oil in a frying pan. Add cumin seeds, ginger garlic paste and sauté until fragrant and light golden.
  2. Add mashed potatoes, salt, turmeric pwd and another 5 minutes.
  3. Add red chilly pwd, chopped coriander leaves and well combine. Remove from fire. Then mash the mixture into soft dough.
  4. Divide the cooled mixture into big lemon size balls. Keep aside.

  1. In a bowl add wheat flour,salt and enough water and knead into dough. Cover. Set aside for at least  15 minutes.
  2. Divide the dough into small balls.
  3. Roll out the balls into small puris. Now place the potato ball in the middle of the puri and close with your hands as shown in the picture.
  4. Then sprinkle with a little flour, roll out into big chapattis. Make sure that the curry won’t come out.
  5. Mean while heat a tawa (pan) on over low heat, place the parata on it.
  6. Cook, spreading  both sides with ghee till light golden brown hue.

delicious aalu parata is ready to eat. Serve hot with raitha.
