INGREDIENTS:

  1. 1 bunch stems of amaranth (cut into small pieces) (1 big cup).
  2. 2 tbsp s chick peas.
  3. 1 medium onion (chopped).
  4. 2 green chilies (chopped).
  5. 1 medium tomato (finely chopped).
  6. Salt- to taste.
  7. 1 pinch turmeric pwd.
  8. ½ tsp red chilly pwd.
  9. ¼ tsp garam masala pwd.
  10. ½ tsp ginger garlic paste.
  11. 1 cup water.
  12. 1 tbsp chopped coriander leaves.

FOR TEMPERING:

  1. 1 and ½ tbsp s oil.
  2. 1 tsp Cumin seeds/ jeera/ jeelakarra.
  3. 1 tsp split black gram (skin less)/ urad dal/ minappappu.
  4. 1 tsp Mustard seeds/rai/ aavaalu.
  5. 1 sprig curry leaves.

PREPARATION:

  • Place the chick peas with sufficient water, in a pressure cooker and pressure cook up to 1 whistle for par boiling.

METHOD:

  1. Heat oil in a nonstick cooking pan on medium flame.
  2. Add cumin seeds. Mustard seeds and split black gram and let them splutter.
  3. Add chopped onion, and green chilies ginger garlic paste and sauté until fragrant.
  4. Add amaranth stem pieces, curry leaves, chopped coriander leaves, salt and turmeric pwd and mix.

  5. Sauté for 7 minutes or till the stem pieces soften.
  6. Add finely chopped tomato and saute for a minute.

  7. Now add par boiled chick peas, red chilly pwd and garam masala pwd and mix.

  8. Add water and bring it to a boil.

  9. Cover with lid. Simmer for 10- 15 minutes or till the curry reaches to required gravy consistency.
