INGREDIENTS:

  1. 2 cups plain flour.
  2. 2 tsp Ghee or oil.
  3. 4 flakes garlic. (peeled).
  4. ½ tsp red chilly pwd.
  5. Salt- to taste.
  6. Oil: sufficient for deep frying.

PREPARATION:

  1. Blend the flakes garlic and red chilly pwd into a course pwd.

  2. Place the Maida, salt, garlic red chilly pwd, ghee in a bowl and mix. And knead the mixture with sufficient water into a tight dough.

  3. Divide the dough into 8 equal portions and roll out each portion into a thin roti.

  4. Cut the roti into diamond shaped bits and spread the pieces gently (as shown in the picture) on the paper and keep aside until use.

METHOD:

  1. Heat oil in a frying pan on high flame. When oil is hot, Slide a few diamond bits gently. After a few sec. they puff up in hot oil and float.

  2.  Then reduce the flame to medium. Deep fry the hot diamonds till crisp and golden hue.

  3. Now remove them with a slotted ladle.
  4. Similarly fry the remaining diamond bits and preserve  them in an air tight container.

Tasty hot diamonds ready to serve.
