Main ingredients: split red gram and pumpkin pieces and vegetable’ pieces of your choice.

Preparation: 15 minutes and cook time: 15 minutes.

Serves- 4-6.

VEGETABLES:

  1. ¼ kg. Pumpkin piece (peeled and cut into 2”-3” pieces).
  2. 2 medium onions (peeled and cut into 4 pieces).
  3. 4 Green chilies. (slit length wise).
  4. 1 Drum stick (cut into 3” pieces).
  5. 3 medium Tomatoes (cut into cubes).
  6. Vegetable pieces of your choice like (cucumber, eggplant, ladyfinger, bottle gourd pieces).

INGREDIENTS:

  1.  ½ cup Split red gram (neatly washed).
  2. Salt- to taste,
  3. 1 pinch Turmeric pwd.
  4. 1 tsp Sambar pwd or (2 tbsp coriander seeds,3 black pepper, 4 red chili, 1 tsp cumin seeds- dry roasted and grind into a fine pwd).
  5. 1 tsp sugar or 1 small piece jaggery (optional).
  6. 1 tbsp thick tamarind pulp.
  7. ¼ bunch fresh coriander leaves (chopped).
  8. 4- 5 cups water.

FOR TEMPERING:

  1. ½- 1 tbsp oil.
  2. 2 garlic flakes (slightly crushed).
  3. 2 dry red chili.
  4. 1 tsp mustard seeds/rai/ aavaalu.
  5. 1 tsp cumin seeds/jeera/ jeelakarra.
  6. 1 split black gram (skin less)/urad dal/ minappappu.
  7. 1 sprig curry leaves.
  8. ¼ tsp Asafoetida/ hing/ inguva.

METHOD:

  1. Place the washed split red gram along with sufficient water and pressure cook up to 3 whistles.
  2. Let it cool. Remove lid and grind the red gram into a smooth paste. Keep aside.
  3. Mean while place the pumpkin bits along with all veggies, 4-5 cups of water, salt, turmeric pwd, sambar pwd, tamarind pulp, sugar and fresh coriander leaves in a wide cooking vessel.

  4. Bring the pieces to a boil, simmer for 3- 5 minutes.
  5. Add cooked thick red gram paste and bring it to a boil. Adjust salt. Simmer another 5 minutes.

  6.  Turn off flame and keep aside.
  7. For tempering, heat oil in a cooking pan, add garlic, red chili, mustard seeds, cumin seeds and split black gram.
  8.  As they begin to change color, add asafoetida and curry leaves and pour this temper over the sambar and mix well.

Serve hot with rice, or for any breakfast like idli, dosa, bonda, vada etc..
