Main ingredients: plantains (arati kaayalu) and ginger garlic paste.

Preparation: 5 minutes and cook time: 15 minutes.

INGREDIENTS:

  1. 3 small plantains (peeled and cut into 1” pieces).
  2. 1 medium onion (chopped).
  3. 3 green chilies (cut in to diagonal shape).
  4. Salt- to taste.
  5. 1 pinch Turmeric pwd.
  6. ½  tsp red chilly pwd.
  7. 1/2 tsp ginger garlic paste.
  8. 2 tbsp chopped coriander leaves.
  9. 1 sprig curry leaves.
  10.  ½ cup water.

FOR TEMPERING:

  1. 2-3 tbsp oil.
  2. 1 tsp Mustard seeds/rai/ aavaalu.
  3. 1 tsp cumin seeds/ jeera/ jeelakarra.
  4. 1 tsp split black gram/urad dal/ minappappu (skin less).

METHOD:

  1. Heat oil in a frying pan on medium flame, add cumin seeds, mustard seeds, split black gram and let them splutter.
  2. Add chopped onion and sauté for few seconds. Add plantain pieces, salt and turmeric pwd and stir fry for 10 minutes or till the pieces soften.

  3. Add red chilly pwd and ginger garlic paste and sauté until fragrant.

  4. Add curry leaves, coriander leaves, green chilies and water and mix.

  5. Sauté the mixture until thicken and turn off flame.
