INGREDIENTS:

  1. 150 gm Refined wheat flour/ maida.
  2. 50 gm Wheat flour.
  3. 50 gm Bengal gram flour.
  4. 50 gm rice flour.
  5.  Salt- to taste.
  6. Water- (sufficient to make stiff dough).
  7. oil- sufficient  for deep frying.

TO PREPARE MASALA PASTE:

  1. 2 sprigs mint.
  2. 2 sprigs coriander leaves.
  3. 50 gm ginger.
  4. 25 gm flakes garlic.
  5. 7 medium green chilies.
  6. 1” cinnamon stick.
  7. 2 cloves.

Grind all the above (7 masala) ingredients into a fine paste.

METHOD:

  1. Mix together refined wheat flour, wheat flour, Bengal gram flour, rice flour, masala paste and salt in a bowl. Add enough water and knead into a stiff dough.

  2. Make the dough into lemon big sized balls. Roll out into puris.
  3. Mean while heat the oil in a frying pan, slide the masala puris gently into the oil.

  4. Deep fry till the puris puff up and are evenly fried on both sides

  5. Drain on paper napkin and serve hot with tomato ketchup or beans curry.
